In 2011, his son Hannes Schirmer founded the Biogemüseanbaubetrieb Stubai/Tirol.
As part of this operation, organic pumpkins, sunflowers and summer rye are grown in crop rotation on approximately 3 hectares of organic land in Neustift in the Stubaital and in Rum. Grassland cultivation is also carried out on around 3 hectares around the small-scale fields.

As part of this organic business founding, the guesthouse Apartments Karlhof (2012) was built, which is run by Hannes and Kendra Schirmer-Bartels as part of a farm holidays for a total of 10 people.
There are two farms on the Karlhof property.
Josef and Andrea Schirmer’s full-time business operates on a total area of around 20 hectares. Of this, around 10 hectares include vegetable cultivation (with 30 different types of vegetables, primarily mixed salads, zucchini, cauliflower, chives, cabbage, etc.), around 5 hectares of grassland and arable farming (for keeping suckler cows and ewes) and around 5 hectares of forest (for own timber and firewood requirements).
Josef and Andrea also run the Schirmer guesthouse. In addition to the guesthouse, Andrea Schirmer pampers her guests and the guests of the Karlhof Apartments with a rich farmer’s breakfast in her private “Stubn”.
